Fresh China Old Ginger (Halia Tua) is a cornerstone aromatic in Asian cooking, prized for its fully matured rhizomes, fibrous texture, concentrated gingerol content, and potent, fiery warmth.

Physical Characteristics

• Size: Large, knobby, multi-branched hand-shaped rhizomes measuring 4 to 8 inches (10 to 20 cm) in length.

• Skin & Surface: Thick, dry, papery light-tan to pale golden-brown skin that protects the interior flesh during long storage.

• Flesh & Fiber: Pale yellow to deep golden interior dense with visible, tough longitudinal fibers running through the core.

• Texture: Firm, dense, and tough-textured, yielding intense aromatic oils when sliced, bruised, or grated.

Taste and Culinary Uses

• Flavor: Sharp, pungent, and intensely spicy with a deep, lingering woody warmth and strong aromatic bite that far exceeds young ginger.

• Culinary Applications: Essential for neutralizing gamey or fishy odors in meats and seafood, base aromatics for Asian soups, herbal tonics, curries, stews, and warming ginger teas.

• Cultivation & Sourcing: Harvested at full maturity (typically 9 to 10 months or more after planting) when the plant leaves die back, ensuring low water content, high essential oil concentration, and superior shelf stability.

Any request for cancellation made or reschedule delivery after the Grace Period will not be entertained.

We reserve the absolute discretion to approve or reject your request for cancellation or reschedule delivery. For any cancellation of your order, you shall be responsible for the payment of an administrative charge, which shall be determined by us prior to your cancellation. Notwithstanding anything stated to the contrary, no cancellation or reschedule delivery will be entertained once your orders have been shipped to your shipping address.
