Description

Fresh Lime (Limau Nipis), also known as Key Lime, is a small citrus fruit with a thin green skin, juicy flesh and a sharp, zesty flavour. Its fresh citrus aroma and acidity make it a versatile ingredient for Southeast Asian cooking, drinks, sauces, marinades and dressings.

Physical Characteristics

  • Size: Small to medium, round citrus fruit measuring 1.5 to 2 inches (3.5 to 5 cm) in diameter.

  • Skin & Surface: Smooth, thin, glossy deep-green skin that gradually lightens to a yellowish-green hue as it reaches peak maturity.

  • Flesh & Seeds: Translucent, pale yellowish-green segmented pulp packed with plump juice sacs and small, pale seeds.

  • Texture: Firm, tender, and smooth-skinned, yielding easily to gentle pressure when ripe and bursting with abundant juice upon squeezing.

Growth and Origin

  • Native Habitat: Native to tropical Southeast Asia, where it thrives in warm, sun-drenched environments with high humidity.

  • Cultivation & Sourcing: Farmed extensively on low-lying citrus orchards in tropical regions, harvested at peak juice yield while the rind remains firm and vibrant green to guarantee maximum tartness and extended shelf life.

How to Use
Fresh lime has a sharp, sour and zesty flavour that adds a refreshing citrus taste to a variety of dishes. Squeeze fresh lime juice over noodles, grilled meats, seafood and other savoury dishes, or use it in sambal, marinades, dipping sauces and soups such as Tom Yam and Soto. Lime juice also complements the flavours of seafood and meat in marinades. For drinks, add lime juice to iced lime tea, sirap limau or chilled honey water. Fresh lime slices and wedges can also be used as garnishes or added to drinks for extra citrus flavour.

Nutritional Benefits
Fresh lime is a source of vitamin C, which supports normal immune function and helps the body absorb iron from plant-based foods. It also contains small amounts of other nutrients and naturally occurring plant compounds. Adding fresh lime juice to meals and drinks is an easy way to enjoy its bright citrus flavour as part of a balanced diet.

Storage Method
Store fresh limes in a cool, dry place. For longer storage, keep them refrigerated in the refrigerator and use them while they are fresh and firm.

Frequently Asked Questions

What is Limau Nipis?
Limau Nipis is the Malay name commonly used for lime, a small citrus fruit with green skin, juicy flesh and a sharp, sour flavour. It is widely used in Malaysian and Southeast Asian cooking and drinks.
What does lime taste like?
Fresh lime has a sharp, sour and zesty flavour with a fresh citrus aroma. Its acidity helps balance rich, spicy and savoury dishes.
What can I use lime for?
Fresh lime can be used in sambals, marinades, dipping sauces, soups, noodle dishes, seafood, dressings and refreshing drinks. Lime juice can also be squeezed over cooked dishes just before serving to add a bright citrus flavour.
How do you use fresh lime in cooking?
Cut the lime into halves or wedges and squeeze the juice into sauces, marinades, soups or cooked dishes. Lime zest can also be used in recipes that call for a stronger citrus aroma. Wash the fruit before cutting or zesting.
Can you eat lime raw?
Yes. Lime can be consumed raw, although its strong sour flavour means it is more commonly used as juice, wedges or a flavouring ingredient rather than eaten on its own.
Can I use fresh lime in drinks?
Yes. Fresh lime juice can be added to iced lime tea, sirap limau, chilled honey water and other beverages. Lime slices and wedges can also be used as garnishes or added to drinks for extra citrus flavour.
How do you store fresh limes?
Store fresh limes in the refrigerator to help maintain their freshness for longer. Keep them dry and use them while they remain firm and juicy. Cut limes should be placed in a covered container and refrigerated.
What is the difference between lime and lemon?
Limes are generally smaller, green-skinned and more sharply sour, while lemons are usually larger, yellow-skinned and have a different balance of acidity and aroma. Both can be used in cooking, drinks, dressings and marinades.
